Honey Garlic Tofu

If you have adopted a plant-based lifestyle, no matter what time of the year, family gatherings have the potential to be torture – but they don’t have to be! For you non-believers, it is absolutely possible not to consume meat and still be satisfied. If you’re up for the challenge, give this Honey Garlic Tofu a try. It is high in protein and a perfect blend of salty and sweet.

Ingredients
1 pack of extra firm tofu
2-3 cloves garlic
3 Tablespoons honey
1 Tablespoon liquid amigos
2 teaspoons dried rosemary
1/2 teaspoon ginger powder

Directions
Preheat oven to 400 degrees.
Press tofu at least 10 minutes.
Slice tofu into equally sized rectangular pieces.
Place on a couple sheets of paper towel, then cover the top with paper towel and wrap in a kitchen towel. Place a heavy book on top.
Allow to sit for 10 minutes.
Cut tofu into one-inch cubes. Place on lightly sprayed baking sheet, and lightly sprinkle with no more than a 1/4 teaspoon of salt.

OPTIONAL STEP For a deeper flavour, exclude salt from the previous step. Marinate tofu after pressing and before baking: To a medium bowl add tofu, one tablespoon liquid aminos and two teaspoons fresh grated ginger. Mix and allow to sit for about 15-30 minutes. Bake for 20 minutes.

Sauce
Blend the garlic cloves, honey, liquid aminos, ginger powder and dried rosemary OR you can manually mince garlic and combine with remaining ingredients.

When tofu is ready, lightly spray a frying pan over medium heat. If adding vegetables, sautee in frying pan until your desired tenderness is reached.

Add tofu and sauce. Stir somewhat frequently for three to five minutes.

ADDITIONAL NOTES: 1. Use Non GMO/Organic tofu, if possible. 2. Don’t skip the tofu pressing; it gives the tofu more of a meaty texture. 3. The optional step is HIGHLY recommended. 4. If you are not a fan of tofu, this recipe may just change your mind. Give it a try!
