Good Eats: Bermuda Banana Bread

Banana Bread is an all-time favourite of Bermudians of all ages! Served warm with butter, cheese, peanut butter and any other topping which suits your palate, it can be eaten as a delicious dessert or a mid-day snack. It’s easy to make, so I thought I’d share this recipe with you which hopefully will remain in your family for years to come.

Ingredients

2 cups of ripe bananas (mashed)
3 cups of flour
2 eggs
1 cup of brown sugar
1 cup of vegtable oil
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp boiling water

Directions

1) Combine all wet ingredients in bowl
2) Sift all dry ingredients and add to wet
3) Add boiling water, mix well
4) Pour mixture into greased pan and bake at 350 degrees for approx 50 mins to 1 hr
5) Serve
